When choosing our Christmas coffee, we always try to pick something that the whole family will love. A coffee that’s balanced, sweet and great for sharing, with flavours that go well with all the other good stuff we consume at this time of year! With help from our friends at Nordic Approach, we’ve sourced this beautiful lot from Roman Flores and his son Amilcar - we hope you enjoy it as much as we do! 

Roman Flores owns and runs the farm La Fila in Intibuca, Honduras and this particular lot comes from 2 hectares of the farm which his son Amilcar will eventually inherit. Under his guidance, Amilcar has learnt how to take good care of the trees from adopting correct pruning techniques to fertilizer usage. There’s a huge emphasis on selective picking on the farm, ensuring only the best and ripest cherries are processed. Coffee is milled on the same day and fermented for a total of 24-30 hours before being dried in a solar dryer for 20 days. Roman is continually reinvesting and improving infrastructure on the farm, with plans to expand their drying facilities in the near future. 

With flavours of honeycomb, plum and salted chocolate, this coffee is perfect for brewing in big batches and best enjoyed with an extra helping of Christmas pud!
