This coffee is quite special because it’s been harvested in a relatively unknown region of Ethiopia. Located at the base of the Bale Mountain on the north east side, this is an area filled with dense forest, providing shade to the coffee farms below. This forest receives an abundance of rainfall early in the season and showers towards harvest – providing ideal growing conditions for producing quality coffee.
There are currently 742 farmers who deliver their cherries to the Riripa washing station for processing. This particular lot is certified organic, which means no synthetic fertilisers, pesticides and herbicides were used in its production. At Riripa, cherries are sorted by hand before the skin of the fruit is removed using a disc pulper. The coffee is then washed and graded in channels by density, followed by a wet fermentation lasting 72 hours. The drying process involves laying the coffee approximately two centimeters deep on raised beds where it is dried for 14 days.
We love this coffee for its perfumed florals, pastry-like sweetness and crisp apple acidity – flavours we would not typically expect from Ethiopia! We hope you enjoy it as much as we do.

There are 742 farmers that deliver their cherries to Riripa washing station for processing. The dried parchment must then be approved by the Ethiopian Commodity Exchange (ECX) checkpoint where its contents are graded and registered as exportable product before it is warehoused in Addis Ababa. The exporter, SNAP Trading & Industry PLC then mills the coffee, prepares the export documentation and transports the coffee to the port in Djibouti. Our importer, Nordic Approach, ships the coffee to their warehouse in Belgium and arranges the onward transport to our roastery.
