Victoriana Ramirez is a second generation coffee producer, in the town of Concepcion Huista in Huehuetenango. This is our second lot from Huehuetenango this season, and our goal was to pick coffees that highlighted the wide range of flavours that can be found here. With notes of dark chocolate and red berries, this is a lovely contrast to the citrus and slightly spicy flavours found in Mynor Cano. Using similar practices, both Mynor and Victoriana farm coffee very close to each other, and if you'd like to take your home brewing to the next level, we think it's very cool to taste both coffees side by side! 

T’Zun-Wit’z is the name of Victoriana’s farm and means “Birth of the hill” in the local indiginous Popti language. All coffee on the farm is selectively picked by hand and depulped on the same day. This lot was fermented in plastic tubs for 48 hours, soaked in clean water for 12 hours, and patio dried over 5 days. Victoriana is very passionate about her work, and is continuously looking to improve her practices. Her children are currently in school, but she hopes one day they will inherit the land and continue the family business. 

When we’re looking for coffees to buy, it’s good practice to taste everything in silence and compare our notes at the end. Out of ten samples, this coffee was one of the best on the table, and we both had ‘chocolate torte’ written in big letters in our cupping notes. Expect an indulgent and rich cup, with notes of dark chocolate and a fresh raspberry. Very moreish!
